Okay, this is gonna sound n00bish...but how do you do white expanse? Or whatever its called....

Do you mean make a white background? You need to have a bended paper behind the shooting. But to get it as white as that movie you'll need a editing program aswell.

Okay.
Basically, you'd need some white card - or good paper - and merely take the Photograph. (If that is for photographs).
After that, you'd need to edit using Levels and eradicate the background, but retaining the shadow and the thing you want to photograph.
This pic, for example, was edited slightly with levels and then edited in Photoshop; the background apart from the shadow was removed.
